Rosemary and Thyme White Bean Dip

Ingredients:

Nutrition facts, per serving: calories, 112; fat, 9g; carbohydrate, 18.9g; dietary fiber, 4.3g; protein, 6.1g

1/2 garlic clove
1-1/4 cups canned romano beans, drained and rinsed
1 Tbs. fresh lemon juice
2 Tbs. chopped parsley
2 Tbs. fresh rosemary
2 Tbs. fresh thyme, save
extra-virgin olive oil, as needed
cold water, as needed
salt and pepper, to taste
whole-wheat pita breads, lavash, Belgium endive and radicchio as desired

Directions:

  1. Place garlic, beans and liquid into a food processor and blend until smooth.
  2. Add fresh herbs into the food processor and blend until incorporated.
  3. Serve with half of a whole-wheat pita bread, lavash, Belgium endive or radicchio.
