"If you want a real Jamaican treat, there is nothing that beats "rummed" bananas. My friend, Virginia Burke, introduced them to me in the hills above Ocho Rios, baking them on a traditional jerk pit."

Yield: 4 servings
Ingredients:
4 ripe bananas
4 Tbs. brown sugar
4 tsp. butter
1 cup orange juice
1 Tbs. dark rum
4 Tbs. coconut cream or ice cream
Directions:
- Pre heat oven to 350 degrees F.
- Place bananas in a greased baking dish.
- Sprinkle with brown sugar and place a pat of butter on top.
- Mix orange juice and rum and pour around the bananas.
- Bake for 20 minutes.
- Serve with a dollop of coconut cream or ice cream
