Jamaican Rum-Baked Bananas

Yield: 4 servings

Ingredients:

4 ripe bananas
4 Tbs. brown sugar
4 tsp. butter
1 cup orange juice
1 Tbs. dark rum
4 Tbs. coconut cream or ice cream

Directions:

  1. Pre heat oven to 350 degrees F.
  2. Place bananas in a greased baking dish.
  3. Sprinkle with brown sugar and place a pat of butter on top.
  4. Mix orange juice and rum and pour around the bananas.
  5. Bake for 20 minutes.
  6. Serve with a dollop of coconut cream or ice cream
