Maple Blazed Crêpes

Chef's Note: Prepare the crêpes first then the syrup

Ingredients:

1/4 cup of butter
1 cup flour
3/4 cup milk
1/3 cup of maple syrup
2 Tbs. Maple Cream Brandy
Pinch of salt

Directions:

  1. Combine all of the ingredients together in a blender and blend until smooth
  2. Place a frying pan over medium heat
  3. Spoon about 1/4 cup of the mixture into the pre-heated frying pan; the mixture will make four crêpes.
  4. Once the top of the crêpe begins to bubble flip it over onto the other side until golden brown.
  5. Keep the crêpes warm on a heated plate or in a low temperature oven.

Maple Syrup

Ingredients:

3/4 cup of maple syrup
1/4 cup of Maple Whiskey

Directions:

  1. Re-heat the frying pan over medium heat
  2. Add the maple syrup and bring to a boil, stirring occasionally
  3. Add the maple whiskey and flambé.
  4. Once the alcohol has burned off, place the crêpes into the pan and simmer for 3 minutes.

To Plate: Place on a plate with whipped cream and/or maple sugar and enjoy!
