Ingredients:

Yield: 4 servings

2 lbs. of boneless pork loin, cut into cubes
1 cup olive oil
2 cups vodka
2 tsp. lemon juice
1 Tbs. salt
1 Tbs. pepper
1 tsp. dried oregano
1 cup parsley, minced
1 tsp. basil
1 small clove garlic, minced
4-6 Metal skewers

Directions:

  1. Place the pork loin cubes in a large bowl or baking dish.
  2. In a screw top jar combine all of the ingredients and shake well.
  3. Pour the marinade over the pork loin cubes.
  4. Cover and marinate in the refrigerator for 4-8 hours or overnight. Stirring the marinade and the pork cubes every couple of hours.
  5. When ready to cook, place 4-5 cubes of meat on each skewer.
  6. Grill the shashlik over medium coals for 12-16 minutes, turning once.

To Plate: Serve with rice, cucumber and beat salad and of course, plenty of cold vodka.
