Andong Beef Roll

Ingredients:

Yield: 8 servings

1 prime rib of beef, sliced width-wise into 8 180 g. servings
pinch of salt
freshly-ground black pepper
4 cups of black rice
3 carrots, peeled and julienned
string for binding the roll
extra-virgin olive oil
soju
rosemary for garnish

Directions:

  1. Prepare the rice first.
  2. Place a sliced piece of prime rib on a cutting board. Sprinkle with salt and pepper.
  3. Spread 1/2-cup of black rice on the beef.
  4. Place 8 julienned carrots on the rice.
  5. Roll the beef slice and secure using string.
  6. Heat the oil in a large skillet over medium heat.
  7. Place the beef roll in the pan and sear until golden brown on each side.
  8. Add the soju and flambé for 2 minutes.
  9. Remove the beef with a slotted spoon and set aside.
  10. Repeat procedure for the remaining pieces of meat.

Sauce

Ingredients:

2 large apples cut into chunks
2 pears cut into chunks
2 cups strawberries, sliced
1 Tbs. soy sauce
1 Tbs. steak sauce

Directions:

  1. Put the apple, pear and strawberry pieces into a blender and puree.
  2. Pour puree into a pan and bring to a boil. Reduce heat and simmer.
  3. Add a tablespoon of soy sauce and steak sauce.
  4. Stir mixture and set aside.

To Plate: Place the beef roll on a heated serving dish, spoon fruit puree over the roll and garnish with rosemary sprigs.
