Recipe: Tabla Restaurant's Tablatini Cocktail

2 oz Absolute Citron vodka
Lemongrass-infused pineapple soup (recipe follows)
Splash or less of lime juice

Shake all ingredients well and pour into a martini glass. Garnish with a piece of fresh pineapple skewered with lemongrass.

Pineapple Soup

Makes enough for 8-10 cocktails

1 lb. pineapple
1 quart water
1/2 lb. lemongrass with tops and bottoms removed
1/8-cup sugar (can be more or less sweet to taste)

Boil five minutes, stirring constantly, then strain. Refrigerate in an airtight container.
