Greens and Goat Cheese Bruschetta

Makes 4 slices

Ingredients:
1 cup thinly sliced arugula
1 cup thinly sliced endive
1 cup clean dry baby spinach
2 Tbs. extra virgin olive oil
1 Tbs. balsamic vinegar
sea salt and ground black pepper to taste
4 slices coarse, country-style Italian bread,
3 oz. good quality goat cheese

Instructions:

1. Place the greens, oil and vinegar in a small bowl and toss well. Salt and pepper to taste.
2. Toast both sides of the bread under the broiler or in a lightly oiled frying pan.
3. Divide the goat cheese into four portions and spread over one side of each piece of toast. Mound a quarter of the greens on top of the cheese. Serve immediately.
