1 cup milk
1 garlic clove
juice of 1 lime
1/2-cup heavy cream
2 avocados
1/2 tsp. salt
2 Tbs. finely chopped cilantro
4 cups baby spinach, washed
3 small raw beets, peeled and cut into sticks
1 jicama, peeled and cut into sticks
1 cup diced pineapple
1 cup croutons
1/2-cup toasted sesame seeds
Instructions:
To prepare dressing, purée milk, garlic, lime juice, cream, avocados, salt and cilantro in a blender.
Just before serving, combine spinach, beets, jicama and pineapple in a salad bowl.
Sprinkle croutons and sesame seeds on top.
Serve with dressing on the side.
