Roasted Yams with Cilantro
World at Your Table : Episode FLWYT-103

Ingredients:

4 large yams, peeled and cut into bite-size chunks
2 Tbs. olive oil
salt
freshly ground pepper
2 Tbs. butter
2 Tbs. minced fresh cilantro

Instructions:

  1. Position rack in bottom third of oven and preheat to 400F.
  2. Toss yams and olive oil in large bowl to coat, then spread in single layer on a baking sheet. Sprinkle with salt and pepper.
  3. Roast until tender and golden brown, stirring occasionally, about 20 minutes.
  4. Drop butter onto yams in small pieces. Roast until glazed and browned, stirring occasionally.
  5. Transfer to serving bowl and sprinkle with cilantro.
