Italian Meatballs
World at Your Table : Episode FLWYT-106

Ingredients:

1 lb. chopped meat
1/2 lb. spicy Italian sausage
1/2-cup fresh parsley
pepper and salt
5 slices low-carb whole grain bread
1 cup milk
Italian seasoning, any brand, dry
3 eggs
2 Tbs. chopped garlic
1 cup parmesan cheese

Instructions:

  1. Remove sausage skin and add sausage and chopped meat to large mixing bowl.
  2. In another bowl, beat eggs and add parsley, pepper, salt, parmesan cheese and garlic.
  3. Soak bread in milk, squeeze dry. Crumble and add Italian seasoning to taste.
  4. Add seasoned bread crumb to mixing bowl. Mix with hands into a large ball.
  5. Form about 16 meatballs and place them in glass Pyrex dish.
  6. Bake at 375F for 15 minutes. Add to gravy (Italian sauce) pot. Cook for three hours.
