Chelo/Berenj — Persian Rice
World at Your Table : Episode FLWYT-107

Ingredients:

3 cups Persian basmati rice
Water
2 Tbs. salt
1/2-cup oil
1 tsp. turmeric

Instructions:

  1. Boil rice in two quarts water with salt. It's ready after about 10-15 minutes or when you bite into a grain and there is no hard center.
  2. Pour rice and water from pot into a colander to drain. Rinse any excess salt off rice.
  3. Pour oil and turmeric into a big Teflon pot. Turn pot on high and slowly put drained rice in pot in the shape of a hill.
  4. After about five minutes, turn heat to medium-low and allow rice to cook for about an hour. The bottom will be very crispy.
