Fried Ginnan Nuts and Edamame
World at Your Table : Episode FLWYT-108

Ingredients

1 can of ginnan nuts or fresh ginnan nuts (ginko nuts)
1/2 frozen package of edamame (without pods)
1/2 package harusame noodles
cooking oil (for frying)
sea salt to taste

Instructions:

  1. Heat oil in pot. Once it reaches the desired temperature, add edamame and ginnan about a half cup at a time. They will be done in one or two minutes, when you should scoop them out with a slotted spoon (preferably one that is meant for frying foods).
  2. Place fried items on a piece of white paper or paper towel to soak up as much excess oil as possible. Repeat until all edamame and ginnan nuts are fried, then salt them.
  3. Add the harusame to the oil. Be careful — the noodles will fry up in a few seconds! If you leave them too long they'll become too hard to eat. Sea salt the noodles to taste.
  4. To serve, place the harusame on a serving plate and put fried edamame and ginnan all over the noodles.
