Bombay Chaat

Ingredients:

3 medium potatoes, boiled, cubed and lightly salted
1 16 oz. can garbanzo beans
1 small, finely chopped onion
4 Tbs. cilantro, finely chopped

Dressing:

1/2-cup plain yogurt
1/4-cup water
1 Tbs. chaat masala (from Indian grocery store)
pinch of salt (to taste)

Sauces:

1/2-cup sweet brown chutney (from Indian grocery store)
1/4-cup green chutney (from Indian grocery store)

Garnish:

3/4-cup sev (from Indian grocery store)
cilantro

Instructions:

  1. Boil potatoes until cooked through, peel and chop into cubes. Let cool, lightly salt.
  2. Finely chop onions and cilantro.
  3. In large serving bowl, mix potatoes, garbanzo beans, onion and cilantro.
  4. In small bowl, whisk yogurt, water, chaat masala and salt until smooth — no lumps.
  5. Just prior to serving, add dressing, sauces and mix together.
  6. Garnish with extra sev and cilantroand serve immediately.

Serving suggestion: Serve as an appetizer or on buffet table as part of the main course.
