Potato Beet Salad
Ingredients:
5-6 medium-sized potatoes
1 medium-sized beet (red)
2 large carrots
1 can kidney beans
1 lb. sauerkraut
1 medium-sized onion
1 pickle
2 Tbs. extra-virgin olive oil
1 pinch salt (to taste)
Directions:
- Boil potatoes, beet and carrots and allow to cool.
- Peel the skin off and cut into small cubes and place in mixing bowls.
- Add drained beans, drained sauerkraut, chopped onion, cubed pickle and oil. Mix well.
- Serve as a side dish with meat or poultry.
