Potato Beet Salad

Ingredients:

5-6 medium-sized potatoes
1 medium-sized beet (red)
2 large carrots
1 can kidney beans
1 lb. sauerkraut
1 medium-sized onion
1 pickle
2 Tbs. extra-virgin olive oil
1 pinch salt (to taste)

Directions:

  1. Boil potatoes, beet and carrots and allow to cool.
  2. Peel the skin off and cut into small cubes and place in mixing bowls.
  3. Add drained beans, drained sauerkraut, chopped onion, cubed pickle and oil. Mix well.
  4. Serve as a side dish with meat or poultry.
